FACTURAS
"Facturas" serve to title Argentina's pastry culture, whose origins are marked by the mix of European influences from early 20th-century immigrants arriving in Argentina as well as the improvisation of bakers working in new settings (whether geographically or chronologically) with, what were at times, limited resources—the result of which is the fashioning out of a naming and baking process specific to Argentina. This process comes alive in every morning rush, any afternoon's languor, in side-street cafés and corner panaderías, and of course, the box taken home to share with friends and family.
The facturas we make pay homage to the original and best-known types: the two medialuna croissants, the vigilante and sacramento soft rolls, and the fried churros and berlinesas, aka bolas de fraile. And in the spirit of facturas, we have embraced with our own recipe experimentation other popular danish and puff pastry forms to offer our community the great gift of choice.
